Abstract

Kod dostave hrane koja zahtjeva temperaturni režim veoma je bitna točnost, preciznost i razvijenost hladnog lanca. Hladni lanac osigurava da hrana zadrži svoje nutritivne vrijednosti, kvalitetu i oblik. Hrana koja zahtjeva određeni temperaturni režim kao što je meso, voće i povrće i mliječni proizvodi često prelazi veliki broj kilometara kako bi stigao do trgovina. U prijevozu se koriste različiti modovi prijevoza kao što su zračni prijevoz, pomorski, ali i cestovni prijevoz. Najčešće se koristi cestovni prijevoz koji je uz zračni prijevoz najbolje razvijen. U Hrvatskoj se najviše koristi cestovni prijevoz i temelj ovog rada je prikazati što je hladni lanac, kod koje vrste proizvoda se on koristi i na primjeru trgovačkog lanca su prikazani troškovi i sama učestalost korištenja hladnog lanca.

Abstract (english)

When delivering food that requires a temperature regime, the accuracy, precision and development of the cold chain is very important. The cold chain ensures that food retains its nutritional value, quality and shape. Food that requires a certain temperature regime, such as meat, fruit and vegetables and dairy products, often travels a large number of kilometers to reach stores. Different modes of transport are used in transport, such as air transport, sea transport, and road transport. Road transport is most often used, which is the best developed along with air transport. In Croatia, road transport is used the most and the basis of this paper is to show what the cold chain is, for which type of products it is used, and on the example of a commercial store, the costs and the very frequency of using the cold chain are shown.
